Jiffy Cinnamon Rolls

Well, you are stuck at home in the blizzard, which by the way is the first time that word has been used where I live, and you want  need some type of comfort food.  Cinnamon rolls were the food of choice for us this morning.  Kaitlyn and I made this yummy, quick and easy recipe.

Jiffy Cinnamon Rolls

  • 4-5 c. flour
  • 1- box - Jiffy Cake Mix (yellow)
  • 2 pkg quick rise yeast
  • 2 c. warm water
  • 1 tsp salt
  • 1/2 cup sugar
  • 1 T. cinnamon
  • 2 T melted butter
Mix 3 c. flour, cake mix, yeast and salt.  (we used my Kitchenaid mixer and dough hook).  Add water, mix till smooth.  Add enough flour to work well.  Put dough out on floured surface.  Kneed well, 6-8 times.  Roll out into a 9" x 18" area.  Spread with butter (we use more butter about 4 T).  Mix cinnnamon and sugar together  (again we double this amount).  Pour over dough evenly.  Cut in 1" slices.  Put on greased cookie sheet.  Cover let rised 15 minutes or until doubled.  Uncover, bake 15-18 minutes at 350 degrees or till golden brown.

We ice with a powdered sugar glaze.

and one more picture since I was working on all the settings on my new camera

Enjoy, they are so good.

Off to finish my Channel-Cabi-inspired jacket (hopefully)
